El Pedregal Azteca
Ecuador
This excellent restaurant is a loving tribute to the cuisine of Mexico, and is run by a Mexican couple - Juan Manuel Ramos and Maria Balarezo - who opened the doors way back in 1989. Here you will find arguably the best Mexican cuisine in the whole of Ecuador.
The ultimate goal of this restaurant is to preserve traditional Mexican gastronomy, and it is certainly doing a very good job. Indeed, the variety of dishes on the menu pay homage to this mission - the handmade tortillas, for example. Other highlights include enchiladas, mole poblano, fiery chilli con carne, cochinita and chicken breast doused in a spicy chocolate sauce.
And it doesn't begin and end with the cuisine. Mexico is also brought to life in the interior décor and the appearance of the staff. The walls are brightly decorated with the signature shades of Mexico, and there are thousands of messages handwritten on the walls from previous satisfied diners, giving the venue a charming sense of history and heritage. The staff wear traditional white shirts and bright red bandanas around their necks, and the music is, of course, Mexican.
