Also, don’t miss trying 'El Mercado' in Cuenca if you’re around,locals rave about their plant-based options that always feel authentic, not like a copy of what you’d get back home. If you plan your visit during the rainy season, a hot bowl of locro de papas made vegan-style is pure comfort. And one tip? Ask if dishes contain naranjilla, it adds a flavor most tourists miss but you’ll adore. Ecuador’s fresh produce means the vegan food here feels vibrant and genuine.
