Roux Bar & Bistro

Situated in the modern (south) part of the city of Cuenca, Roux Bar & Bistro has a very American style menu, not a large one, but it features something for everyone, including salads and a sandwich bar. Some of their specialties are beef tenderloin, pan seared trout, panko breaded pork milanesa, spaghetti al pesto, and Cajun chicken pasta.

On Sundays they have a brunch which is very popular among locals and visitors. On Saturdays, alas, they open only upon request for groups of 8 people or more. Check out their specials on Tuesdays, Wednesdays and Thursdays. They often have live shows, art exhibits, contests and more.
